Vermentino has a reputation for expressing sea salt marine like characteristics. I spent my childhood growing up near the ocean so vermentino seemed like a natural choice for me. This is a white grape variety native to the Mediterranean and found on the islands of Sardinia and Corsica. You can also find it in growing in Northern Italy and Southern France.
Picked early to retain bright, natural acidity. The grapes were pressed quite hard to extract phenolics, which help create the chalky texture. The palate is moreish with lively acidity and a savoury briney finish. The seaspray and minerality of this wine is unmistakeable. This is a refreshingly dry wine with a moderate level of alcohol.
Matured in stainless steel. No finings were used. Sourced from the Chalmers Vineyard in Heathcote.
